Healthy Instant Ramen

Servings:  1-2 people Prep time:  5 minutes Cooking time:  10 minutes Tools : Large pot Small pot Small bowl of cold water Ingredients : 2 eggs (or more if you like) 1 lb (1/2kg) shrimp 1 tbsp (3 cloves) garlic, minced 1/8 onion, minced (optional) 1 packet of instant noodles 2 cups of water 1 red bell pepper (or any color available) 2 cups of spinach 2 squares of roasted seaweed Directions : 1.)  Boil eggs with water  in the small pot  for 10 minutes with medium-high heat . 2.)  Sauté garlic and onion  in the large pot with medium heat until lightly browned, about 20-30 seconds. 3.)  Add shrimp  and cook for  about 30 seconds or after one side turns red, then flip and repeat.   Remove the shrimp afterward  to avoid becoming rubbery. 4.)   Add 2 cups of water and allow to boil before adding  instant noodles .  Let cook for 4 minutes or until desired noodle softness achieved, then turn off heat. 5.)   Add bell peppers to blanch  for 1 minute, then add shrimp to serve. 6.)
