Shrimp Sinigang from Scratch

Shrimp Sinigang from Scratch


Servings: 2-4 people
Prep time: 5 minutes (not including thaw time)
Cooking time: 20-25 minutes


Tools:

  • Large pot
  • Large bowl
Ingredients:
  • 2 lbs (1kg) shrimp or 6 lbs (2kg) chicken pieces
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 1/8 onion
  • 1 tbsp (3 cloves) garlic, minced
  • 1 tbsp olive oil
  • 2 tomatoes, sliced
  • 1 lemon, sliced for squeezing
  • 2.5 cups of water
  • Vegetables of your choice (asparagus, bok choi, eggplant, long beans, okra, radish, etc.)

Directions:

1.) Marinate shrimp (or chicken) in a large bowl with 1/4 tsp salt and ground black pepper.  Let sit while preparing other ingredients.  Set pan to medium heat and add oil when warm.

2.) Sauté onions and garlic until lightly browned, about 20-30 seconds.

3.) Add shrimp and cook for about 30 seconds or after one side turns red, then flip and repeat.  Remove the shrimp afterward to avoid becoming rubbery.  If chicken, cook for 4 minutes on one side, then flip and repeat, but leave in pot.

4.) Add tomatoes and cook for about 15-30 seconds, stirring occasionally.  Add 2.5 cups of water, squeeze lemon, and reduce heat to medium-low for 10 minutes.

5.) Add vegetables of your choice and blanch for about 1-2 minutes depending on your choice.  Generally, things that are thick/tough like asparagus or beans might take about 2 minutes whereas thin/soft veggies like bok choi or okra will only take about 1 minute.  Add shrimp back into pot and serve.
