Healthy Instant Ramen
Servings: 1-2 people

- Large pot
- Small pot
- Small bowl of cold water
- 2 eggs (or more if you like)
- 1 lb (1/2kg) shrimp
- 1 tbsp (3 cloves) garlic, minced
- 1/8 onion, minced (optional)
- 1 packet of instant noodles
- 2 cups of water
- 1 red bell pepper (or any color available)
- 2 cups of spinach
- 2 squares of roasted seaweed
1.) Boil eggs with water in the small pot for 10 minutes with medium-high heat.
2.) Sauté garlic and onion in the large pot with medium heat until lightly browned, about 20-30 seconds.
3.) Add shrimp and cook for about 30 seconds or after one side turns red, then flip and repeat. Remove the shrimp afterward to avoid becoming rubbery.
4.) Add 2 cups of water and allow to boil before adding instant noodles. Let cook for 4 minutes or until desired noodle softness achieved, then turn off heat.
5.) Add bell peppers to blanch for 1 minute, then add shrimp to serve.
6.) Remove eggs and place in small bowl of cold water. Crack shells and allow to cool before peeling. If you wait too long, the shell will stick to the egg, making it more difficult to remove.
7.) Add boiled eggs and roasted seaweed to serving bowl.
