Banana Muffins from Scratch
Prep time: 5-10 minutes
Cooking time: 20 minutes
- Muffin pan
- Large bowl
- 3 ripe bananas, mashed
- 5 tbsp butter, melted
- 1/4 cup brown sugar
- 1 egg, beaten
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/8 teaspoon salt
- 1 1/2 cups all-purpose flour
- mixed nuts, crushed (optional)
- chocolate chips (optional)
- blueberries (optional)
1.) Preheat oven to 350 degrees F.
2.) Combine the mashed bananas with the melted butter in a large bowl. Add sugar, egg, and vanilla. Stir well.
3.) Sprinkle baking soda, baking powder, and salt. Stir again.
4.) Add flour and chocolate chips or mixed nuts (if desired). Stir some more until no longer powdery.
5.) Pour batter into muffin pan but do not overflow. Batter will expand. Can add more chocolate chips or mixed nuts as toppings.
6.) Bake for 20 minutes. If making banana bread, bake for 40 minutes. Allow to cool inside oven for 10 minutes before safely removing.
