Easy Adobo

Servings: 3-4
Prep time: 5 minutes (not including thaw + marinating time)
Cooking time: 30-50 minutes depending on preference

Tools:

  • Large pot

  • Stove


Ingredients:

  • 4-5 lbs chicken thighs (can include drumsticks for added flavor)

  • 4 (or 2 tsp) cloves garlic, diced

  • 1 tsp black peppercorns

  • 1/2 cup white vinegar

  • 1/8 cup balsamic vinegar (optional)

  • 1/2 cup soy sauce

  • 3 bay leaves

  • 1 tbsp brown sugar

  • 1 pinch red pepper flakes (optional)


Directions:


1.) Combine the chicken, garlic, peppercorns, vinegar, soy sauce, and bay leaves into your large pot.  Can let marinate in the fridge for 1-3 hours for added flavor.


2.) Set over high heat until boiling then lower heat and cover to simmer for 30 minutes.  Can let cook for an additional 20 minutes to thicken sauce if desired.


3.) Serve with steamed rice and enjoy!
