Beef-Stuffed Bell Peppers



Servings: 5-6
Prep time: 10 minutes (not including thaw time)
Cooking time: 50-60 minutes

Tools:
  • Medium (or large) pan
  • Medium (or large) glass baking pan*
  • Oven
*If using a metal baking pan, add about 5-10 minutes more since it bakes slower than glass.

Ingredients:
  • 1/4 of an onion, minced
  • 1 tbsp minced garlic
  • 1 lb of beef, minced
  • 2 carrots, minced
  • 1 tomato, minced
  • 1/2 cup tomato sauce
  • Cheese of your choice, minced
  • 5-6 bell peppers, top part cut off just below stem and seeds removed
  • 2 tbsp of virgin olive oil
  • Salt
  • Pepper
  • Pepper flakes
  • Paprika
  • Aluminum foil

Directions:
1.) Pour 2 tbsp of virgin olive oil (or your choice of cooking oil) into your cooking pan, set to medium heat, and cook the garlic and onions until lightly browned.

2.) Add in beef then sprinkle with salt, pepper, pepper flakes (if you like it a bit spicy), and paprika.  Let that cook for 2-3 minutes.  It'll cook more later in the oven.

3.) Stir in carrots, tomato, tomato sauce, sprinkle more salt and pepper, then let simmer for another 3-5 minutes.  This is your meat sauce.

4.) Preheat oven to 375°F while waiting.  Put peppers onto the baking pan.  Put a layer of minced cheese into the bell pepper, followed by a scoop of your meat sauce,  Repeat until full, then return pepper's cover.

5.) Cover peppers and baking pan with aluminum foil and set in oven for 30 minutes.  Remove foil and continue to bake for another 15 minutes.
